Easy Cheesy Shepherd’s Pie in 30 Minutes!

My husband absolutely loves Shepherd’s Pie, I mean, who doesn’t love some good comfort food? Even though I enjoy it as well, after both of us coming home around 5 or 6 and the demands of our 3 year old, peeling potatoes isn’t something I want to do on a weeknight. We are always looking for quick and easy hearty recipes that can be put together with little effort during the week, while still allowing time for relaxing at the end of a long day. Once I discovered Bob Evans ready made mashed potatoes, it was a game changer! I don’t do the boxed potato flakes, but these mashed potatoes were actually good, tasted homemade and definitely the next best thing to peeling up spuds and making my own. With a few other simple steps and ingredients I usually have at home; my husband can get one of his favorite meals on the table in 30 minutes, and I can pour myself a victory glass of wine and sit on the couch with my feet up. (Well, I can dream about that last part!)

Stuff you need:

  • 1 24 oz container of Bob Evans ready made mashed potatoes. (I like the sour cream and chives or the original flavor)
  • 1 lb of ground beef
  • 1 packet of Lipton Onion Soup Mix
  • 3/4 cup of whole milk
  • 1 tablespoon of flour
  • Black pepper to taste
  • 1 can of sweet whole kernel corn (canned or frozen peas/carrots optional)
  • 1 & 1/2 cups of shredded cheddar cheese
  • 9 x 9 baking dish

Chef it up:

1.) Preheat oven to 400 degrees

2.) In a large pan brown ground beef and drain. Return to pan and add the packet of onion soup mix, flour and milk. Stir until mixture becomes thick, add pepper to taste.

3.) Heat Bob Evans mashed potatoes according to instructions, it’s about 4 or 5 minutes in the microwave. You can use the microwave to heat up with corn/vegetables as well.

4.) Spray your baking dish and layer the meat on the bottom, then the corn/veggies, then mashed potatoes. Evenly spread the cheddar on top.

5.) Bake for about 12 minutes or until cheese on top becomes nice and melted.

6.) Let cool for at least 5 minutes or so before serving.

This weeknight meal can literally be prepared and on the table in 30 minutes and it tastes delicious! The onion soup mix makes the beef super flavorful and the mashed potatoes with the melted cheese and corn just blend so well with it.
